This tasty salad is perfect for autumn and is packed with flavour.

Ingredients

Dressing

2tbsp each of honey, lemon juice, apple cider vinegar, orange juice and Dijon mustard

1tsp crushed garlic

¼ cup olive oil

Couscous salad

1 cup cooked pearl couscous

1/3 cup each of pecans and dried cranberries

1 cup each of chopped kale and roasted or fried butternut squash

¼ cup thinly sliced red onion

Instructions

  1. Mix together all the dressing ingredients and shake or stir well. Taste and adjust the seasoning with salt and pepper.
  2. Toss the kale with a spoonful of dressing, massaging it to make it more tender before adding the remaining salad ingredients. You will need around a third of a cup of dressing, but you can add more if you like. Store any leftover dressing in an airtight jar or container in the fridge.
