Ingredients:

  • 300g firm tofu, pressed and cut into cubes
  • 150g fresh blackberries
  • 60ml soy sauce
  • 1 tbsp chili flakes (adjust to taste)
  • 1 tbsp freshly ground black pepper
  • 2 tbsp olive oil
  • 1 tbsp rice vinegar
  • 1 clove garlic, minced
  • 2 tsp fresh ginger, grated
  • 1 tbsp brown sugar

 

Instructions:

 

  1. Prepare the Blackberry Sauce:

 

In a blender, combine blackberries, soy sauce, rice vinegar, chili flakes, garlic, ginger, and brown sugar. Blend until you get a smooth sauce. Pour this into a saucepan and simmer over medium heat for 5-7 minutes until it thickens slightly. Set aside.

 

  1. Pan-fry the Tofu:

 

In a non-stick frying pan or skillet, heat the olive oil over medium-high heat. Once hot, add the tofu cubes. Fry until golden brown on all sides, which should take about 4-5 minutes per side. Remove from heat and set aside.

 

  1. Glaze the Tofu:

 

Return the pan to the heat and reduce to medium. Add the blackberry sauce to the pan and bring to a simmer. Place the tofu back into the pan, ensuring each piece is coated in the sauce. Simmer for 2-3 minutes, turning the tofu occasionally, until the sauce has thickened and clings to the tofu pieces.

 

Serve:

 

Plate the glazed tofu and sprinkle with freshly ground black pepper. Garnish with a few fresh blackberries and some chili flakes if desired. This dish pairs wonderfully with steamed rice and green vegetables.
