If you want something light and fresh to eat, then try this recipe. It’s perfect for when you’re in a hurry because it only takes 15 minutes to make. Serves 6.

Ingredients

1 bunch trimmed asparagus, halved lengthways

2 bunches broccolini, trimmed and halved lengthways

60g baby rocket

1 peeled and thinly sliced avocado

1 small thinly sliced red onion

1/2 peeled and finely chopped mango

1 seeded and finely chopped long red chilli

1tbsp white wine vinegar

2tbsp olive oil

1tbsp finely chopped coriander

Instructions

  1. Blanche broccoli for two minutes in boiling water before adding the asparagus. Continue to blanche for a further two minutes before refreshing under cold water and draining.
  2. Mix asparagus, broccoli, avocado, rocket and onion in a large serving bowl. Mix together the chilli, coriander, mango, oil and vinegar in a small bowl. Season to taste and spoon over the salad. Serve immediately and enjoy.
