This refreshing salad combines crisp cucumber with a rich miso dressing, accented by the crunch of roasted peanuts and the sharpness of shallots. It’s a perfect side dish or light meal, balancing salty, tangy, and umami flavours.

 

Ingredients:

  • 2 cucumbers, thinly sliced
  • 1 shallot, finely sliced
  • 1/4 cup roasted peanuts, roughly chopped
  • 2 tablespoons miso paste
  • 1 tablespoon rice vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon honey
  • 1/4 cup fresh coriander leaves

 

Method:

  1. Prepare the Dressing: In a small bowl, whisk together the miso paste, rice vinegar, soy sauce, sesame oil, and honey until smooth.
  2. Assemble the Salad: In a large bowl, combine the cucumber slices, shallot, and roasted peanuts. Drizzle with the miso dressing and toss gently to coat.
  3. Serve: Garnish with fresh coriander leaves and serve immediately.
